In light of the holiday season, I thought I’d share with you one of my very favorite recipes. I make this family cheeseball recipe for Thanksgiving, holiday parties, Christmas, and New Years! Basically anytime I’m invited to bring along a dish to share, this is my go to recipe. Why? Because it is Soooooooo dang Good. I have never left a party (where I brought this cheeseball) whiteout being asked for the recipe by at least 5 people. I swear, it is a crowd pleaser and you will be asked to bring it time and again. Read on as I share this creamy cheeseball recipe.
Ok I guess the cat is out of the bag now that I’m sharing this secret family recipe with all you pals. As you read through the ingredients, you will wonder why I use this specific brand of pastrami. It has been modified before, even thought it would improve the taste, but It doesn’t. Something about the thin slices and flavor is just perfect. Also, It is recommended that you hand chop each vegetable into tiny dices. Yes this is a bit time consuming but O so worth the extra work. You could use a hand chopper or food processor to speed up the process, but my mother in law would give you a good scolding for that one. If you choose to ignore my hand chopping advice, just know that the color of the cheeseball will be slightly orange and the flavor is just not quit as good. BUT….it will still be pretty yummy. So here’s the secret family recipe revealed!
Creamy Cheeseball Recipe
1 – 8oz package of cream cheese
1 – 2oz package of Buddig original pastrami
1 – large carrot
1 – stalk of celery
1 – green onion
1/2 cup walnuts chopped
Take the cream cheese out of the fridge and let it soften on the counter while chopping the veggies. Chop up the carrot, celery, green onion, and pastrami not tiny pieces. This is a really important step. The smaller the dices, the better flavor and spreadability of the cheeseball.
In a mixing bowl, add the cream cheese, chopped carrot, celery, green onion, and pastrami. Mix until fully combined. Form a ball with the ingredients.
Chop the walnuts and roll the cheeseball with the walnuts.
Wrap in plastic wrap and place in fridge for at least 1 hour before serving.
Since I joined the family almost 10 years ago, I have made the cheeseball dozens of times. There are a couple of modifications to the recipe that my mother in law actually likes. Occasionally, I will chop up about 2 oz of cheddar cheese into small dices and fold it into the cheeseball. I also substitute pecans for walnuts…but that’s just a nut preference there. I always double the recipe and make 2 cheeseballs. After you have one, you will surely want a second:)
Serve the cheeseball with a variety of crackers, pretzels, and veggies. Enjoy!
