Easy-Peasy Key Lime Bars

Man I have been craving some citrus lately!  Fresh lemonade, lemon cake, to lime Popsicles, you name it I’ve wanted it.  With summer coming to a screeching halt, I decided I’d better do something about it!  
 
One of my all time favorite desserts is Key Lime Pie.  I didn’t feel like the fuss of making a pie today so here’s what I came up with… and only 6 ingredients!!
 

Easy-Peasy Key Lime Bars

Ingredients

Crust:

  • 1 cup butter, softened
  • 1/2 cup powdered sugar
  • 2 cups all purpose flour

Filling:

  • 4 large eggs
  • 2 cups granulated sugar
  • 6 tbsp all purpose flour
  • 1/4 cup plus 2 tbsp of key lime juice (I had regular limes, so i used those and it tasted great)
  • 1 tbsp key lime zest

Instructions

  1. Preheat oven to 350 degrees.  Spray or grease a 9×13″ baking pan generously with cooking spray or shortening. 

Prepare the crust:

  1. In a large bowl, beat the butter and 1/2 cup powdered sugar till light and fluffy, about 2-3 minutes. Add flour and salt, and beat on low speed until just incorporated, about 1 minute.  Press the dough evenly into the prepared pan and bake on the middle rack of the oven 20-25 minutes, or until lightly golden.  Remove from the oven and cool on a work rack.

Prepare the filling:

  1. In a medium bowl, whisk the eggs and 2 cups of sugar.  Add the flour and whisk until combined.  Whisk in the lime juice and zest.  Pour over the cooled crust, and bake 25 minutes longer, or until the filling has set.  Cool completely on a wire rack.  Dust with sifted powdered sugar once cooled.  Cut into squares and Enjoy!
