Layered salad – Mother’s Day Favorite

This is a stunning layered salad that believe it or not is super simple to make!  Stunning & Simple is a winning combo in my book! I can’t believe I just recently discovered it!  I was asking some friends what they were making for Easter dinner and this layered salad came up.  It was such a hit at Easter that I added it to my go-to recipes and I think it would make the perfect side dish for a special mothers day brunch!

This Layered salad is perfect for entertaining, potlucks, and for special occasions like Mother’s Day! You can vary the ingredients according to your taste and what you have on hand. You can dress it up a bit with fresh herbs, feta or blue cheese—whatever tickles your fancy! The standard ingredients in most layered salads are lettuce, crumbled bacon, chedder cheese, green onions, hard boiled eggs, and green peas, which are stacked in a glass bowl so each colorful layer can be seen!

 

The REAL sign of a layered salad is what goes on top: a delicious simple dressing, which is spread evenly over the top to “seal in” all the yummy ingredients below. After that, it’s refrigerated.

This is perfect for Mother’s Day! Whether prepared yourself, or by your loving kids and husband–hint hint, it’s one of the only salads I know that can prepared ahead of time.  And I promise they can handle it! This layered salad is the perfect cool, crisp complement to all the grilled meats…and what husband doesn’t like to captain the grill?!

Here’s what you need. Feel free to switch up the ingredients, add in olives or avocados…get rid of the radishes… whatever floats your boat!

 

 

 

 

Layered Salad

Course Salad

Ingredients

Salad Ingredients:

  • 1 head Iceberg lettuce chopped
  • 1/2 cup green onions chopped
  • 1 cucumber chopped
  • 2 cups frozen peas thawed (do not cook)
  • 6 hard boiled eggs diced
  • 1 bunch radishes finely sliced
  • 2 cups shredded cheddar cheese
  • 1/2 pack of bacon chopped into bits and fried
  • 2 cups cherry tomatoes sliced in half

Simple Dressing Ingredients:

  • 2 cup mayonnaise
  • 1 1/2 tbsp sugar
  • 1/4 tsp garlic powder
  • 1 tsp Lawry's seasoning salt

Instructions

  1. Combine all ingredients for dressing in a small bowl and set aside.

  2. Place the lettuce in a large glass bowl and top with a layer of chopped cucumbers & green onions.

  3. Add in the layer of peas and on top of those the chopped raddishes.

  4. Lay the hard boiled eggs across the top for the final layer before the dressing.

  5. Carefully spread the simple dressing over the layered salad.  Completely cover the top of the salad creating a seal to the edge of the bowl.

  6. Sprinkle with cheese and bacon pieces. 

  7. Then lay each sliced tomato over the cheese and bacon layer in a decorative way.

  8. Refrigerate for at least 2 hours before serving.  This really blends the flavors and keeps the salad crisp!

  9. Toss before serving or instruct your guests how to serve the salad.  I actually prefer to dip my serving spoons all the way to the bottom and bring each layer up undisturbed! But you do what you like!
