Ya’ll have been asking for this flavorful potato salad recipe and here it is – just in time for hosting Summer parties and cookouts!  Here is how to make this flavorful potato salad:

This is not your average potato salad!  The bacon and olives take the flavor to another level and it is insanely good.  Almost addictive. This is a Summertime classic in our house and a true comfort food! 

My absolute go to’s for hosting Summer parties are my fruit pizza, strawberry shortcake and this! 

Start with 10 potatoes, slice and boil them.  Then comes the fun part – adding in all the tasty ingredients that make this the best potato salad ever!  Here is a great way to cut potatoes like a pro: HERE

Ready to pull it all together – lookin’ good!  A rough chop is really all you need for everything and once you incorporate the wet ingredients, it comes together in a way that binds it all together perfectly.

I have been making this for years and I never leave the party without someone asking for the recipe – and it’s pretty simple to pull together!  That dijon mustard – it adds the perfect tang of heat.  

Look at all those yummy chunks of goodness!  I’m telling you, the consistency of this summertime potato salad is perfect and it just blends so well together!  The bacon makes everything slightly smokey and the olives are the perfect addition of salt and bite. In addition, you have the crunch of the celery and pickles – you guys, I am drooling a bit over here. 

Big fan over here! He could probably eat the entire bowl if I let him and the kids love it too!

Flavorful Potato Salad

Ingredients

  • 10 potatoes halved, boiled and drained
  • 4 celery stalks chopped
  • 6 green onions chopped
  • 5 pickles chopped
  • 1 3.8 oz can sliced black olives
  • 6 boiled eggs chopped
  • 1 4.3oz bag real bacon bits
  • 1 cups mayonnaise
  • 1/2 cup sour cream
  • 2 tbsp dijon mustard
  • salt and pepper to taste

Instructions

  1. Start by boiling your potatoes and while they cook, prep and chop all your other ingredients

  2. Once your potatoes are cooled to room temperature, combined all ingredients in a large bowl or serving dish

  3. Season with salt and pepper as needed and enjoy!  You can serve immediately or chill until party time!
