BBQ Keto Recipe- Sausage and Peppers

*I have specified 2 different cooking methods here: outdoor grill or cast iron skillet.

Ingredients

  • 1 green bell pepper pitted and sliced
  • 1 red bell pepper pitted and sliced
  • 1 large onion sliced
  • 1 clove of garlic
  • 1 package (5) Johnsonville Irish garlic sausage -seriously so good!
  • 2 tbsp olive oil
  • 1 tbsp butter

Instructions

Cast Iron Skillet

  1. Slice all your veggies, green pepper, red pepper, onion, and mushrooms and set aside.

  2. Add 1 tablespoon of olive oil and heat over medium-high.  Add sausage.  Cook over medium-high heat until browned, about 5 minutes, turning links often.

  3. Reduce heat to medium-low.  Carefully add 1/2 cup water to skillet.  Cover and simmer to 12 minutes.

  4. Remove sausage from skillet, cover & set aside.

  5. Drain skillet of excess water and juices and add 1 tablespoon of olive oil over medium- high heat.

  6. When oil is hot add onions and peppers.  Season generously with salt and pepper, and cook, stirring frequently, until softened and beginning to brown, about 10 minutes. Adjust heat as necessary if mixture seems to be cooking too quickly.  Add garlic just at the end with 1 tablespoon of butter. Cook about 1 minute.

  7. Add the sausage back into the skillet with the peppers and onions until the sausage is heated through again.

  8. Enjoy your one skillet meal.

BBQ or Grilling

  1. Heat grill to high.  Cut 2 sheets of foil about 12″ long.

  2. Slice all your veggies, green pepper, red pepper, onion, and mushrooms and set aside.

  3. Grill sausage until charred, 3 minutes per side, then divide between foil pieces. Top with sliced peppers and onions and drizzle 1 tablespoon of olive oil over each group and salt and pepper generously.

  4. Fold foil packets crosswise over the sausage and pepper mixture to completely cover the food.  Roll top and bottom edges to seal closed.

  5. Grill until peepers and onions are tender and sausage is cooked, 13-14 minutes.

  6. Add 1 tablespoon of butter to each foil group and cook 2 more minutes.

  7. Enjoy your summer Bbq sausage and peppers with easy cleanup.
