Chocolate Covered Peanut Butter Balls

Creamy peanut butter dipped in yummy smooth chocolate

Ingredients

  • 2 lbs semi- sweet chocolate chips (sometimes I use dark chocolate chips too)
  • 2 18 oz Jars of creamy peanut butter (I prefer Skippy)
  • 2 lbs powdered sugar
  • 1 cup butter, softened
  • 3 cups Rice Krispies Cereal (optional)

Instructions

  1. Mix peanut butter, butter, and sugar together with an electric mixer. Fold in rice krispies if using them. Roll into balls (approx. 1" size) and place onto a wax paper covered baking sheet. Place in freezer for an hour before rolling in chocolate.

    Melt chocolate chips in a double boiler or place a metal mixing bowl over a pot of boiling water (medium heat) to melt chocolate.

    Dip and roll each peanut butter ball in the melted chocolate and place on a wax covered baking sheet. Drizzle sugar or sprinkles on top before chocolate sets. Place in freezer to set for 30 min. Remove and store in fridge until 30 min before ready to serve.
