Fluffy, moist and the muffins that go FAST!
Preheat oven to 350 degrees.
Add oats to a blender or food powder processor & process until a flour forms, about 20-30 seconds.
Combine all of the ingredients in a bowl (except chocolate chips) with a whisk. Don’t over mix.
Stir in chocolate chips.
Scoop batter into a lined muffin tin. I find an ice cream scoop works perfectly. I also use parchment paper squares to line my muffin tin.
Top each muffin with 3 chocolate chips.
Bake for 25 min or until a toothpick inserted comes out clean.
