Apple Cake with Vanilla sauce

For me this cake is all about the sauce!  Though the cake itself is moist and yummy, it has a simple, mellow taste that is perfectly complimented by the cream sauce. You can also convert this recipe into 3 mini bunt cakes.  It makes a perfect doorstep gift for the season!

 

Apple Cake with Vanilla Sauce

Ingredients

Cake:

  • 1/4 cup butter (1/2 stick softened)
  • 1 large egg
  • 2 tbsp milk
  • 3/4 cup sugar
  • 1 cup all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cinnamon
  • 2 cups cored, peeled, and chopped apples (Golden Delicious or Crispin)
  • 1/2 cup chopped walnuts (optional)

Vanilla Sauce:

  • 1/4 cup butter (1/2 stick)
  • 1/2 cup sugar
  • 1/4 cup heavy cream
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground cinnamon
  • 1 tsp vanilla extract

Instructions

Cake:

  1. Heat oven to 350 degrees.

  2. Butter and flour and 8 inch square or round cake pan (or 3 mini bundt pans). 

  3. Cream the butter, egg, milk, and sugar together in a large bowl with an electric mixer on medium speed.

  4. Whisk together the flour, baking soda, salt, nutmeg, and cinnamon in a small bowl; then stir into the butter mixture until blended.

  5. Stir in the apples and walnuts.

  6. Spoon the batter into the prepared pan.  The batter should be on the thicker side. 

  7. Bake until lightly browned and a tooth pick or fork inserted in the center comes out clean – 40/45 min. (For mini cake pans cook for 30 min).

  8. Transfer to a wire rack while you make the sauce.

  9. Pour the warm sauce over the cake before serving.

Vanilla Sauce:

  1. Melt butter in a small saucepan over medium heat.

  2. Stir in sugar, heavy cream, ground nutmeg, ground cinnamon, and vanilla extract.

  3. Heat to boiling stirring constantly.  Cook stiring about 1 minute more.

  4. Remove the pan from the heat and set aside to lightly cool and thicken – 5 minutes.

  5. Refrigerate any leftover sauce, tightly covered, up to 3 days.  Makes about 2/3 cup sauce.

  6. Serve with vanilla ice cream or just straight up cream!
