With all the summertime corn that’s coming into season, this grilled flank steak over charred corn & avocado salad will be your new go-to quick and easy dinner.
The secret weapon in this incredibly good salad is charred corn. Corn with browned/blackened kernels adds an extra dimension of flavor. I love grilling out for summer. Less dishes equals a happy mama. My whole family (even kids ages 3-8) loved this one dish meal. You will find this dish on repeat at my house all summer long. Serve it sprawled out over a large bread board or platter and you’ve got yourself a great entertaining dish too!
Charring corn is easy. All you do is set your grill to medium-high and put the corn directly on it. Rotate the corn every few minutes – it will pop and sizzle! In addition to using charred corn, this salad features flank steak . I marinated the flank steak for 2 hours at room temperature prior to cooking.
Add in the thick sliced avocado and drizzle with a creamy herb sauce and you are all set! This yummy platter salad looks every bit as good as it tastes!
