Easy-Peasy Key Lime Bars
Ingredients
Crust:
- 1 cup butter, softened
- 1/2 cup powdered sugar
- 2 cups all purpose flour
Filling:
- 4 large eggs
- 2 cups granulated sugar
- 6 tbsp all purpose flour
- 1/4 cup plus 2 tbsp of key lime juice (I had regular limes, so i used those and it tasted great)
- 1 tbsp key lime zest
Instructions

Preheat oven to 350 degrees.  Spray or grease a 9Ă—13″ baking pan generously with cooking spray or shortening.Â
Prepare the crust:

In a large bowl, beat the butter and 1/2 cup powdered sugar till light and fluffy, about 2-3 minutes. Add flour and salt, and beat on low speed until just incorporated, about 1 minute. Â Press the dough evenly into the prepared pan and bake on the middle rack of the oven 20-25 minutes, or until lightly golden. Â Remove from the oven and cool on a work rack.
Prepare the filling:

In a medium bowl, whisk the eggs and 2 cups of sugar. Â Add the flour and whisk until combined. Â Whisk in the lime juice and zest. Â Pour over the cooled crust, and bake 25 minutes longer, or until the filling has set. Â Cool completely on a wire rack. Â Dust with sifted powdered sugar once cooled. Â Cut into squares and Enjoy!
