Did you say fruit pizza? This yummy summer time treat is one of my family’s favorite treats. This fruit pizza starts with a slightly doughy sugar cookie crust, a generous layer of cream cheese frosting, and topped with your favorite seasonal fruit.

Although you can certainly make this mouthwatering dessert anytime of year, it’s especially great as a refreshing summer treat. I make it every year as we celebrate the Fourth of July, and again and again all summer long.  A couple notes: I prefer using my own sugar cookie recipe as the crust FOUND HERE. Although in a bind, my fall back dough is a couple of Pillsburry pre-made dough tubes.

I use an 18×13 rimmed baking sheet18×13 rimmed baking sheet and fill it till the sugar cookie dough is about 1/3″ thick. Whatever you do, DO NOT USE PRE-MADE FROSTING OUT OF A CAN. My homemade cream cheese frosting with a hint of almond extract really takes this treat to another level. I use my exact sugar cookie recipe and frosting already found on my blog. For this treat, I just half the recipe specifically for the size of pizza (exact proportions shown below).

Fruit pizza is such an easy dessert to make. You just layer the fruit slices in a pretty pattern, and I swear, people will think you are straight-up Martha Stewart. Including yourself. For a patriotic version, make a flag pattern or blue and red stripes. 

Somehow the intentionally under baked sugar cookie + cream cheese frosting does IN FACT taste better WITH neatly sliced fresh fruit on top!

How to Make Fruit Pizza-A Favorite Summertime treat      

PREHEAT oven to 325 degrees F. 

ROLL out the sugar cookie dough in an 18×13 rimmed baking sheet. Make sure the dough covers the entire bottom and meets each edge and corner. ‘Approx. 1/3″ thick.  *If it’s a dark baking sheet, line with parchment paper to prevent burning on the bottom. I use THIS baking sheet. It’s my favorite.          

Bake for 20-22 minutes.  Let cool completely while making cream cheese frosting and slicing fruit 

Spread a generous layer of cream cheese frosting covering entire pan of cookie crust. 

Decorate the top with your favorite seasonal fruit. My favorites are: strawberries, blueberries, kiwi, mangos, mandarin oranges, and raspberries. To create this exact pizza design, I used 1 carton of strawberries sliced, 1 carton of blueberries, and 4 kiwis peeled and sliced in halves. 

Refrigerate till ready to serve. Cut in approx. 3″ squares to serve.

Ingredients

  • 1 cup butter, softened
  • 3 eggs
  • 1 cup sugar
  • 1.5 tsp almond extract
  • 2.5 tsp baking powder
  • 3 cups flour

Cream Cheese Frosting

  • 1 package cream cheese, softened
  • 3/4 cup butter, softened
  • 1/4 tsp vanilla
  • 1/2 tsp almond extract
  • 3/4 pounds powdered sugar

Instructions

Sugar cookie Crust: 1.  Combine butter and sugar using a mixer. Add in all wet ingredients and continue mixing .In a separate bowl, combine baking powder and flour.  Slowly add the dry mixture to the wet batter until you have reached desired dough consistency. I use a kitchen aid for this process. 2. Refrigerate dough for 1 hour. 4. Roll out dough to about 1/4-1/3" thickness to fill 13x18 baking sheet. Bake for *20-22 minutes at 350.  *I like my cookie crust extra soft and chewy so I bake mine for 20 minutes.

Cream cheese frosting: *Mix all ingredients together with a hand mixer or kitchen aid.
