Healthy Pumpkin Mini Waffles

Fall is just around the corner, so of course I’m craving everything pumpkin. The good news is that these healthy pumpkin mini waffles are super easy, super healthy, and super yummy!

I use my favorite healthy pancake/ waffle mix as the base of the recipe and throw in a few fall flavors to boost the taste. Kodiac cakes are packed full of protein and taste so good, but you can use your favorite pancake/waffle mix as the base too.

I have to tell you that these mini waffle makers are the cutest and funnest way to jazz up breakfast or snack time seasonally. We have the pumpkin design, but it comes in a spider web, skeleton, snowflake and more. (Truthfully we use it all year round).

My kids love having these healthy pumpkin mini waffles for breakfast, but they make an excellent after school snack too.

And I feel good about what they’re eating because they are packed with protein and keep them full and with energy until the next meal.

This recipe makes about 10 mini waffles. But, I always triple the recipe and freeze a bunch in a zip lock bag. That way the kids can grab one any time of the day and pop it right in the toaster. Can we say Eggo waffle upgrade?!

Healthy Pumpkin Mini Waffles

Makes 10 mini waffles! A serving size is 1 waffle.

Ingredients

  • 1 1/2 cups kodiak pancake/waffle mix
  • 1 egg
  • 2/3 cup milk
  • 1/2 cup pumpkin puree
  • 1 tsp cinnamon
  • sprinkle nutmeg

Instructions

  1. In a mixing bowl, combine all of the ingredients and whisk together.

  2. Add about 1/4 cup of batter to the mini waffle maker. Green light will turn on once the waffle is fully cooked. (You can use this same recipe for pancakes as well).

  3. Top with your favorite syrup and enjoy.
