So why the Ketogenic diet?  My DM’s from all you insta pals are blowing up about why and how I make this diet work.  The truth is I’ve been eating low carb for about three years consistently. Five months ago I integrated the high fat part of the equation and noticed my body really responded.  In this post, I’ll share my Ketogenic pizza hack as well as some other go to snacks I use to stay on track.

About 6 years ago my father in law was diagnosed with Frontotemporal Dementia (FTD) and Alzheimer’s.  He was only 59 years old, so this came unexpectedly.  No one really knows if it is heredity or not, but it really made my husband and his brothers think twice about some of the diet decisions they were making (or not making). Could their diet help prevent them from getting this debilitation and ultimately terminal disease? Studies show that it is likely!  My hubs older brother started the ketogenic diet 3 years ago and never looked back.  His dedication and conviction got the rest of us thinking. Other than the known side affect of fat loss, the ketogenic diet has some major brain benefits and this is the reason my husband and I started eating Keto too.  Hopefully this way of eating will help keep our brains heathy as well as the rest of our body.  I will say it’s much easier to stay committed having myself and my husband on the same diet.

If you are serious about tracking your ketones and want to be sure that your body is actually in ketosis, I would definitely invest into some test strips.  You can do this in two ways:  Get these ketone test strips for urinalysis  or Get this blood ketone and glucose testing meter kit.  This method is more expensive, but also more accurate.

Most people enter ketosis when blood ketones reach a level of 0.05Mm/dL of blood. However, the optimal range for blood ketones is from 1.5 – 3.0. for optimal fat burning. There is no way of knowing what your ranges are if you are not testing.  So if you are serious about losing weight and serious about this diet, it is a good idea to purchase one of the 2 testing strips mentioned above.

Now on to the day to day stuff.  I have a list of go to snacks that I always keep on hand to make this Ketogenic diet easy.  Here is my helpful keto friendly snack list:

Macadamia nuts ( This is my favorite brand & best priced)I like the salty crunch when I’m craving chips.

Babybell Cheese

pork rinds

sunflower seeds

Mission Low carb tortilla shells (4 net carbs) Perfect for lunch wraps

Almond Butter or Natural peanut butter ( I like this brand)

Hard boiled eggs

80% dark cocoa bar

Beef sticks

cream cheese

deli meat

precut veggies: cucumbers, broccoli, cauliflower, celery, peppers.

pre washed romain lettuce leafs for breadless sandwitches (more on this later)

Here are a few specialty items you will need in your pantry if you plan to do any baking:

almond flour

Coconut Flour

heavy cream

Truvia or other low carb sweetener

xanthan gum (thickening agent)

Who doesn’t love pizza.  Honestly my husband came up with this idea and he has perfected it.  When I shared it on my instagram stories I got so many DM’s that I thought I’d just write up the recipe here.  All you need are 4 ingredients and its done in 10 minutes. No oil needed due to the high fat content in the pepperoni.

10-min Keto Pizza

Ingredients

  • 2 cups shredded mozzarella
  • 3/4 cup pepperoni slices approx.
  • dried oregano to taste
  • garlic powder to taste

Instructions

  1. Layer pepperoni slices to cover the pan leaving no gaps. The pepperonis will shrink when cooked so stack them in!

  2. Layer 1 1/2 cups of the shredded cheese over the pepperoni slices and sprinkle with desired amount of Dried Italian seasoning and garlic powder.  Then layer a handful of pepperonis and the remaining 1/2 cup of shredded cheese on top of that. Remember, this is keto, so we can go heavy on the fat!

  3. Heat pan over medium heat and cover.  Cook for about 5 minutes.  You will see the sides starting to crisp up but the cheese wont be melted all the way through yet.

  4. Take a spatula and separate the edges from the pan and cover and cook for about another 5 minutes.

  5. After a total of 10 minutes, your keto pizza should be done.  Remove from the pan and let it rest for about 2 minutes.

  6. Slice and serve with Marinara sauce on the side. Just be aware of the carbs in the marinara sauce.  You just need a little. I love to serve this with a side salad as well.
